3 cups white or whole wheat flour 1/3
cup sugar
2 1/2 tsp. baking powder 1/2 tsp. baking soda
Mix dry ingredients. Add: 1 1/2 sticks cold butter and cut into dry ingredients
w/pastry blender. (Mixture will resemble cornmeal)
Make
a depression in center and add 1 cup + 1 tbsp of buttermilk. Mix until just moistened
and mixture makes one dough ball. Divide in half and make two 8" rounds on
a single cookie sheet.
Score the rounds into 6 or 8 pieces
and brush tops w/heavy cream. Generously sprinkle cinnamon sugar on the top. Bake
at 350 for 25 minutes until tops are golden brown. Serve warm w/butter, lemon
curd or jam. Makes 16. |
