Irish Soda Bread

3 cups sifted flour
2 1/4 tsp.baking powder
1 1/8 tsp.baking soda
1 1/2 tsp. salt
4 1/2 tbls.sugar 2 heaping tsp. carroway seeds
4 1/2 tbls. shortening (or Oleo)
1 2/3 cups buttermilk*
1 cup raisins
3 tbls. melted butter (for top)
4 tsp. sugar (for top)

* You can make "buttermilk" by putting 1 tablespoon vinegar or lemon juice in a cup and fill to 1 cup level
with whole milk (this is what I usually do)

Blend first 6 ingredients. Cut in shortening until it resembles meal texture. Add buttermilk all at once. Mix lightly to a soft dough. Turn dough into a greased and floured round 9 inch cake pan. Using a sharp knife, cut a cross into top of loaf .

Melt the 3 tablespoons of butter and pour over top. Sprinkle the 4 teaspoons sugar over butter. Bake at 350 degrees in preheated oven for approximately 50-60 minutes (or until golden brown). Enjoy!
