Sausage Grits Breakfast Casserole

1 cup grits cooked in 4 cups of water
1 cup chopped pecans
6 eggs beaten
1/4 cup onion, finely chopped
1 tsp. Joe’s Stuff New Orleans type spice)
1 cup milk
6 ounce box of corn muffin mix
1/4 cup butter
1 lb. ground pork sausage
1/2 tsp. paprika
1/2 lb. colby/monterey jack cheese, shredded

Preheat oven to 350 degrees. Saute sausage with onion until pink has disappeared. In a large bowl, add milk to beaten eggs and mix with cooked grits, corn muffin mix, chopped pecans and butter. Spread sausage mixture on the bottom of a 9x12 baking pan. Add grits mixture and shredded cheese. Sprinkle top with paprika. Bake for about 40 minutes or until firm in the middle. Let set 5 minutes before serving. Serves 10.
