4 eggs beaten 
                              1 lb. lowfat cottage 
                              cheese or ricotta cheese
                              1/3 cup all purpose flour 
                              1/2 tsp. salt 
                              1/8 
                              tsp. pepper 
                              1/2 lb. cheddar cheese, grated , 
                              10 oz. package of frozen 
                              chopped spinach, thawed 
                             Combine all 
                              ingredients and pour into a greased 9 x 9 inch pan. Bake in a preheated 340 degree 
                              oven for about one hour or until eggs are set and top is nicely browned.
