Our Daily Granola

3 Cups old-fashioned oats
1 cup soy nuts
1 Cup slivered almonds
3/4 cup shredded sweetened coconut
1 Tbls. cinnamon
1/2 cup honey
1/2 cup vegetable oil
1/4 cup butter ( 1/2 stick)
1/2 cup golden raisins
1/2 cup dried cranberries
1/2 cup dried apricots, diced

Preheat oven to 325 Degrees. Lightly spray a rimmed baking sheet with nonstick spray. Toss first 4 ingredients together in a large bowl. Melt next 3 ingredients together. Pour syrup mixture over oat mixture & stir to combine. Spread out evenly & thinly on baking sheet. Bake 15 minutes & toss. Bake until golden, another 5-8 minutes. Remove from oven & place back in bowl. Add dried fruits & toss to combine.( Can use any combination you like. Be creative). After thoroughly cool, store in airtight container. Can store in airtight container 2-3 weeks. Recipe can easily be doubled.
