Yankee Grits

1/2 lb. bacon
1 cup quick grits
4 cups water
1 tsp.salt
1/2cup butter (1 stick)
1 cup grated sharp Cheddar cheese
6 eggs
2 tbls. chopped fresh parsley
1/2 cup Half & Half

Cook bacon until crisp and set aside. Cook grits according to package directions, except use 1 tsp. salt instead of 1/2 tsp. salt. Add the butter and cheese, and cook until they have melted, then remove from heat and cool a little.
Stir in two of the eggs, beaten, and pour all into a 2-qt.casserole dish.
Crumble bacon and sprinkle all but 1/2 cup over casserole.
Beat the remaining 4 eggs and Half&Half together, and pour over the bacon and grits casserole.
Bake at 350 degrees for about 45 minutes. Top with remaining bacon and serve hot. Serves 6-8.
