Puffy Omlette

3 eggs, separated pepper & salt to taste
2 tbls. butter

Preheat oven to 400 degrees. Beat egg yolks; set aside. Sprinkle salt over egg whites and beat until stiff but moist. Fold yolks into whites until they are barely incorporated. Put butter into 10" seasoned cast-iron or ovenproof skillet over high heat. When butter begins to foam, pour egg into skillet. Spread the mixture evenly in pan. Sprinkle pepper, cook 1 min. Remove from stove and put into the oven. Cook for 3 min. Remove and spread with your favorite filling; fold omlet. Cut in 1/2 and serve. Makes 2 servings. This is a favorite with guests.
