Apple Strata French Toast with Apple Cider Sauce

1 loaf cinnamon bread
8 oz. package cream cheese
8 eggs
2 1/2 cups milk
1 can apple pie filling cinnamon to taste
1/2 cup apple juice

Grease a 9x13" baking dish.Spread cream cheese on half the bread slices and top with second slice. Cut into cubes, set aside. Whisk together the remaining ingredients. Place the cubes in baking dish and pour the egg mixture evenly over top.
Press down on bread to evenly moisten. Cover with plastic wrap and refrigerate for 2 to 24 hours.
To bake: remove plastic and bake in a 325 degree oven for 35 to 45 minutes, or until center is set and edges are golden.
Let stand about 10 minutes before cutting and serving. Serve with Apple Cider sauce either over or under each piece.

Makes 8 servings. Garnish with green apple slices.

Apple Cider Sauce:

1/2 cup sugar 4 tsp. cornstarch
1/2 tsp. cinnamon 1 cup apple juice
2 tbls. butter

In small sauce pan stir together sugar,cornstarch and cinnamon.Stir in apple juice. Cook over med. heat, stirring constantly,until hot,thick and bubbly. Remove from heat and stir in butter until melted. Makes about 1 1/3 cups. Can be made ahead refrigerated and warmed before serving.
