Morning Glory Muffins

Preheat oven to 350 degrees, then combine in large bowl:
2 1/2 cups sugar
6 eggs
1 1/2 cups salad oil
1 tbls. vanilla

In separate bowl combine:
4 cups flour
4 tsp. baking soda
4 tsp. cinnamon
1 tsp. salt

Add to wet mixture, then add:
4 cups chopped carrots
1 cup raisins
2 chopped apples
1 cup walnut pieces

Bake about 25 minutes. Makes two dozen plus muffins.
