Upside Down Apple Pancake

1 cup pancake mix
1 tablespoon sugar
Combine in a medium-sized bowl with a whisk


2 tart apples (Braeburn works best because the skin cooks up soft.) Red Delicious is not suitable; the skin is too chewy.

Cut apples in quarters, remove seeds, then cut each quarter into thirds
1/2 stick butter - in a 10” broiler-safe frying pan, melt butter over medium heat.

2 tbls. sugar 1/2 tsp. cinnamon
1/4 tsp. nutmeg Add sugar and spices, whisk to mix.

Add apple wedges, placing widest edge against outside rim of pan in a big circle. Fill in the center with more apple wedges.

2/3 cup milk 1 egg

Whisk together milk and egg i n small bowl.

Add milk mixture to pancake and sugar mixture. 1/2 cup blueberries or other fruit, optional.

With a fork or tongs, turn each apple wedge over. Add blueberries between each apple wedge at the outer edge of pan and a few in the center section. Pour batter evenly over apples. Immediately, TURN HEAT TO LOW. Cook about 12 minutes or until bubbles pop on top of pancake. Place pan under broiler for a few seconds until top is golden brown. Place serving platter on top of pan and invert pancake onto serving platter. Cut pancake with a knife into half .Cut each half into thirds to make six wedges.

Garnish border of platter alternating with sausages and pansies or another flower. Pancake needs no additional condiments such as butter or syrup.
